Marinara Sauce with Fresh Herbs

I love marinara sauce made with fresh tomatoes, but if you don't have time to cook your sauce or cut up fresh tomatoes, here's an alternative that I think is a winner every time!

1 16 oz can crushed tomatoes
2-3 Tbsp. EVOO
2-3 cloves of garlic, crushed
1/4 c. chopped onion (use a mild kind)
1/2 can (3 oz) tomato paste
1/4 c. water
12-15 fresh basil leaves, cut up
handful fresh oregano leaves
1 sprig fresh rosemary, chopped
Salt and Pepper to taste

Saute' onion and garlic in hot oil in a medium sized pot until tender and smells great. Add the rest of the ingredients and simmer, covered for about 20 minutes. If too thick, add water, if too thin, remove cover and simmer longer until water evaporates. If you like it more flavor, add more herbs or if you like it spicy add some crushed red pepper. Can be eaten right away, saved for a few days in the fridge (tastes better if you let it sit overnight to meld all the flavors together), or can be frozen for a few months. If you like, you can also use it as a pizza sauce on your favorite homemade pizza.
