Mock Garlic Mashed Potatoes

This recipe is based off one I got from Food Network. When you are tired of white mashed potatoes, try this alternative for a garlicy new flavor. Looks a lot like the real thing, but don't eat this cold -- it isn't very tasty once they cool down.

1 head cauliflower, broken into small pieces
1 Tbsp. cream cheese
1/4 c. grated parmesan cheese
1/2 tsp fresh garlic, minced or crushed (try roasting or sauteing the garlic)
salt & pepper to taste
1 Tbsp. butter
chives (optional)

Boil a large kettle of water. Add cauliflower and cook for 6 minutes or until tender. Drain well and pat dry the cauliflower until moisture gone. Keep warm.

With an immersion blender, blend cream cheese and cauliflower until the consistency of mashed potatoes. Add garlic and parmesan cheese, salt and pepper.

Top with butter and chives. Serve immediately. This tastes best when served warm.
