The best and easiest chicken parmesan

1 - 1 1/3 pounds chicken breasts, cut into chunks
1-2 cloves garlic, crushed
1/2 stick butter, melted
1/2 c. bread crumbs (make your own or buy them already made)
1- 1 1/2 Tbsp. fresh chopped parsley
1/2 tsp. garlic powder
1/4 tsp pepper
1/4- 1/2 tsp salt
1/4 tsp. Italian spice (dried)
1/3 c. grated parmesan cheese (freshly grated only)

Mix butter and garlic and put in one dish, mix crumbs, herbs, spices and parmesan cheese in another bowl. Place cut up chicken in butter, then roll in crumb mixture and place in a stoneware baking dish. Drizzle any leftover butter on top (if none left, drizzle with some EVOO) and sprinkle with remainder of breadcrumbs. Spinkle extra parmesan cheese on top to make it extra cheesy. Bake at 400 degrees until it sizzles, then turn down oven to 350 and bake until chicken is done (about 20-30 minutes total). Serve with a side of spaghetti and homemade marinara sauce, a crisp salad and crusty bread. It's great left over too!
