What inspires my menus and all that jazz......



I recently posted photos on Facebook of a meal I made (see one below). A friend asked me some questions and so I replied. It turned into a wonderful little article that I thought I'd put on my blog. I hope it is helpful to others besides her!



JH: How do you plan your menus, Camille? Do you think of what sounds good or shop sales and build from there? Do you get in ruts? What inspires you???

**Warning: this is kind of a long reply. **

I love your questions! I'm a once-a-week menu planner. I use a small whiteboard that is magnetic to write it out and attach it to my refrigerator. I usually look at the ads and shop the sales or look at what is on sale before I start my menu planning. I use seasonal veggies and fruits to cut cost on fresh produce. Menu planning usually happens on Sunday, so that gives me time to thaw meat from my freezer and make a shopping list. I always keep my lists on my phone, categorized by store. I also have a shopping list on my fridge so I can add those quickly to my phone.

I stock up on items when they are sale, so if there is something I want to make, I often just look at what I might need to buy to complete it. I will also look at items in my pantry and fridge that are about to expire and try to use them up. A huge factor in menu planning is to look at my week to see how busy I am and try to plan meals that are easy for those days when I have no time to spend in the kitchen. I might plan a crock pot meal when I know I'll be gone for most of the day. I also (believe it or not), look at the weather for the week ahead. If it's going to be cold, I plan meals that are warm and cozy and for days when we can grill, I plan a few meals like that. Dave and I cook together so often that he's become a factor in my menu planning! He will chop veggies and meat and I will cook it. He grills, I marinade the meats that go on the grill. If he comes home early, I usually put him to work! He also cleans up my kitchen every night after dinner. Making meals with leftovers is also important because Nathaniel has to take meals with him when he's gone all day. He loves leftovers, so that helps!

I also keep a running list of menu ideas on my phone. I have an app where I can write notes and when I think of things I haven't had in a while, I jot them down so as not to forget (sometimes in the summer I write up ideas for winter meals). It can be as simple as "beef stew" to as complex as an entire menu "meatloaf, mashed potatoes, green beans and baked apples."

I do get into a rut at times and that's when I ask my family for ideas when we are sitting around the dinner table either eating or after dinner when we're all stuffed full. I've found more success when they are hungry! :)

I probably have 100 cookbooks in my personal library (mostly those Pillsbury ones), but I also have about 10 folders with recipes I've printed from the Internet. Some are ones I've made (I date them so I remember) and others that look good and I want to make. I try to separate them into categories, but that has gotten away from me, so one of my tasks this winter is to organize them even better.

My mom was a fantastic cook and planned menus all the time. I still have a few of her written menus and look back at them for ideas. She taught me to have a variety of proteins in the week, so I try to plan at least one beef, one pork, one chicken, one vegetarian, and one fish/seafood menu each week. Some weeks I don't cook them all, but that's my general guideline. I also have menus on my blog which I sometimes peruse for ideas. I also look at the Internet for menu planning ideas. All of these inspire me. Once in a while I go out to dinner and when I find something on the menu that sounds good (or I actually order it), I will try to re-create it at home. This is inspiring too. I've actually looked up menus on the Internet from restaurants and found inspiration.



I've told my children that a healthy meal has many colors, so planning meals has become a challenge to incorporate color into the plate. Taking photos has really helped me to see the colors (or lack thereof) and my family's love for a large variety of food has been helpful.Put simply, we eat just about anything!

Overall, I think I've found a good balance by making family favorites and then adding in a few new recipes so that we don't get tired of the same food. I found that there are so many ways to eat vegetables for example, so if I find I'm in a bit of a rut, I might even try a new way to spice up or cook a veggie (which may not be on my menu).

This year, Nathaniel, Joshua, David and I spent Thanksgiving Day together gathered around the bountiful blessings of God. The best part of Thanksgiving was realizing just how blessed I am to have a wonderful family and that we can all be together in a beautiful house we call home! We have so much to be thankful for! Most of all, I am thankful for Jesus, who not only has given me access to Him on a daily basis, but also who loves to bless me and my family with good things! Food, family, faith, fun -- all because Christ loves us! I must admit, I miss spending this day with my extended family like we used to do. Each of my siblings now celebrate amongst themselves - no more big gatherings like we used to do. "For everything there is a season....and a time for every purpose under heaven." Seasons come, seasons go, but the Word of the Lord endures forever.

Easy-Peasy Meatloaf Dinner

Do you ever feel like chillin' and yet put a top-notch dinner on the table for your family? Well, here you go....

MENU
Chili Sauce-Topped Meatloaf
Loaded Baked Potatoes
French Cut Green Beans with Almonds
Applesauce
(Applesauce is not pictured)

Camille's Favorite Meatloaf
1 pound ground sirloin
1/2 pound ground pork
3/4 cup Uncooked Old Fashioned Oats
1/2 c. finely chopped onion
1/2 c. catsup
1 egg, slightly beaten
1 Tbsp. Worcestershire Sauce
2 large cloves garlic, finely chopped
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
Chili Sauce

Heat oven to 350 degrees. Lightly grease a loaf pan and set aside.

Gently mix all of the ingredients together taking care not to handle it too much. Too much handling will make the meatloaf tough. Press meat mixture into the greased loaf pan, making sure the meat is even on top so that it will bake evenly.

Bake 45-50 minutes. Put chili sauce on top and bake another 10-15 minutes until thermometer reads between 150-160 degrees or until meat is not pink and juices run clear. Drain any fat from the pan.

Let stand at least 5 minutes before slicing.

Loaded Potatoes
4-5 baking potatoes
Olive Oil
Kosher Salt
Butter
Sour Cream
Shredded sharp cheddar cheese
Salt & Pepper
Freshly snipped chives, if available

After preparing the meatloaf, scrub 4-5 baking potatoes. Dry thoroughly with a paper towel. Cut 4-5 pieces of tin foil so it will wrap completely around each  potato. Rub olive oil on each potato and cover with Kosher salt. Wrap each potato in tin foil tightly. Bake with the meat loaf for at least 1 hour or more depending upon the size. Remove tin foil and split open the potato and top with butter, sour cream, cheese, salt and pepper and chives to your liking. 

Green Beans w/Almonds
After 50 minutes, toast sliced almonds in butter and microwave or cook French-cut green beans until tender-crisp. Drain thoroughly and top with butter and toasted almonds.

This meal (with preparation) will take about an hour and a half from start to prayer and will serve 5 people with some leftovers for cold meatloaf sandwiches for those who need a second reason to eat this meatloaf!

Mother's Day Meal Recipes



Menu
Barbecue-grilled Alaskan Salmon
Vegetable Kabobs
Grilled Asparagus
Garden Salad with Blue and Feta Cheeses


BBQ-Grilled Alaskan Salmon

4 Tbsp. butter
4 Tbsp brown sugar
3-4 garlic cloves, pressed
2 Tbsp. lemon juice
2 Tbsp. soy sauce
1 tsp. pepper
1 1/2 pounds Alaskan salmon (thawed) fillet (or 4 salmon steaks)

Wash and pat dry the salmon. In a saucepan, mix the first 6 ingredients. Cook and stir until sugar is melted, boil about a minute. Remove from stove. Heat grill to medium. Spray skin of salmon well with oil. Place salmon, skin-side down on grill. Baste with butter glaze and cook just until salmon begins to flake. Do not overcook! If using salmon steaks, turn once and baste on both sides. Grilling salmon takes around 15 minute total. Be sure salmon stay warm until ready to serve. Makes 4 servings.

Veggie Kabobs

24 Small purple potatoes (or any color will work)
1 orange and 1 red sweet bell pepper, cut into 24-32 pieces
1 sweet vidalia onion, cut into chunks (about 32 pieces)

Par-boil potatoes on the stove for about 7 minutes, until firm, but not hard. Drain and rinse in cold water to stop the cooking process. Dry off with paper towel.

String (alternatively) the potatoes, peppers and onions on kabob skewers (we used metal). Coat with olive oil and spice of your choice (we used BBQ spice). Cook on grill until peppers and onion are tender crisp (about 5-7 minutes). Makes 6-8 veggie kabobs.

Grilled Asparagus

2 pounds fresh asparagus
Olive Oil
Spicy seasoning Mix of your choice

Wash and snap off hard ends of asparagus spears (keep whole). Dry asparagus well and place in a 2 inch deep pan so that they can be coated with oil. Sprinkle olive oil and mix so that spears are well covered. Just before grilling, sprinkle with seasoning (generously). Grill 5 minutes until tender, but not falling apart. Move asparagus around so that they are grilled evenly on all sides. Makes 4 generous servings.


Fresh Garden Salad

1 head romaine lettuce
1/2 orange bell pepper
1/2 red onion
1/2 pt. grape tomatoes
1/2 cucumber
1/4 cup sunflower seeds
1/3 cup chunk blue cheese, broken into pieces
1/3 cup feta cheese
Salad dressing of choice (I recommend Hidden Valley Ranch, but poppy seed or balsamic vinegarette are good too!)

Wash and tear up lettuce, dry well (use a paper towel to blot off most of the water). Place in a bowl and refrigerate until serving time. Wash and cut up veggies (except tomatoes) and place on a plate in the refrigerator to keep cold. Just before serving, add the veggies and sunflower seeds to the salad. Serve with the blue cheese and feta for guests to add themselves (they can add one or both). Top with dressing of choice.
