Baked Apples


For EACH apple you want to bake:

Use a soft apple like McIntosh or Jonathan....wash and core the center out of the apple (remove seeds, but not the bottom blossom stem). With a peeler, peel about 1/2 inch around the middle of the apple. Sprinkle with lemon juice to keep apples from getting brown.

In the center of each apple, add 2 Tbsp. brown sugar, 1 Tbsp. chopped pecans, 1 Tbsp. butter. You can also add raisins if you'd like. Sprinkle with cinnamon after you add the brown sugar and then again after the apple cores are full. Be sure to stuff them full!

Sprinkle more brown sugar, butter, nuts and cinnamon around the bottom of the apples. This will make a nice carmel sauce to spoon over the ice cream! Bake at 350 degrees for about 35-45 minutes or until apples are soft, but still firm.

Oh yes -- serve warm with vanilla ice cream!
