Foil Dinner: Greek Island Fish Packets (A Pampered Chef Recipe)

This recipe is so easy, low calorie, low fat and very filling. And did I mention, it tastes great?!

1 md. onion, sliced
1/2 each green pepper and red pepper, sliced into long strips
1 large zucchini, sliced
2 garlic cloves, crushed
1 14.5 oz can diced tomatoes, undrained
1 tsp. Italian seasoning
4 white fish fillets (4-6 oz ea) like tilapia, orange roughy, etc.
salt, pepper
16-20 pimento-stuffed green olives, sliced

Mix tomatoes, garlic and Italian seasoning into a small bowl. Divide the veggies into 4 equal piles.  Cut four 20x12 inch pieces of heavy duty aluminum foil. Place one fourth of the veggies on the bottom, spoon 2-3 Tbsp. of  tomato mixture on top, place fish piece on top of veggies, sprinkle fish with salt and pepper and top with 1 Tbsp. tomatoes and sprinkle with 4-5 sliced olives. Repeat for the other 3 foil dinners.

If grilling, preheat your grill and place on grill for about 18-22 minutes or until fish is flakey and veggies are tender-crunch. Turn packets half-way through cooking time.

Otherwise, bake at 375 degrees for about a half hour on a baking sheet. Do not turn packets if baking.

When opening, be careful to allow steam to escape.

Serve with whole wheat couscous.
