Roasted sweet potatoes and baby beets (works for most raw veggies!)

These are easy -- just clean, slice, add olive oil, salt and pepper and roast at 450 degrees for about 20-30 minutes in the oven. The sweet potatoes become carmelized and crunchy if you roast them on a stoneware pan. I use Pampered Chef bar pans to roast them and they always turn out scrumpteous!
