Ramen Noodle Coleslaw

1/2 head cabbage, shredded
small head cauliflower, shredded
4 green onions, with tops, sliced
3/4 c. toasted almonds (sliced or slivered)
1 pkg. Chicken flavored Ramen noodles, broken into small pieces, save seasoning packet
1 Tbsp. butter

Dressing
3 Tbsp. olive oil
4 1/2 Tbsp. apple cider vinegar
3 Tbsp. white sugar

Place cabbage, cauliflower and onions in a large bowl. Melt butter in a skillet and add ramen noodles (be sure the noodles are well crushed). If you don't buy the almonds toasted, add them and toast them with the noodles. Add the seasoning packet and continue browning until crunchy and well-browned. Cool noodles and almonds.

Combine the dressing ingredients and stir until sugar is dissolved. Add to the cabbage/cauliflower mixture. Just before serving, stir in the Ramen noodles and toasted almonds. Stir well and crunch away!
