Simple Chicken Tacos


1.5 pounds boneless, skinless chicken breast
3-4 Tablespoons Frontier Mexican Seasoning Blend (or use taco seasoning)
Kosher Salt
Olive Oil

Hard or soft tortilla shells
Lettuce, shredded
Green onion, thinly sliced
Tomato, chopped
Jalapeno, seeded and finely chopped
Sour cream
Mexican cheese, shredded
Salsa
Black Olives
Guacamole (see recipe)
Refried Beans

Heat oven to 350 degrees. Generously sprinkle Mexican Seasoning onto chicken. Sprinkle with salt (if Mexican Seasoning has no salt) and olive oil. Bake, uncovered, for about 25 minutes or until juices run clear. Turn chicken over halfway through baking and coat chicken with more seasoning and olive oil as needed.

Cool chicken and cut into slices or chunks. Return to pan with juices and heat. In the meantime, cut up other ingredients and put in separate bowls. Heat tortillas in oven or microwave. Add chicken, beans, cheese and other toppings as desired.

Serve with Costa Rican Rice and more refried beans and guacamole and chips. Easy meal to make ahead and heat when ready to serve.
