Paula Deen's Corn, Avocado, and Tomato Salad

I take no credit for this recipe. I got this from Paula Deen and it is GOOD!

2 cups of corn (frozen or fresh), cooked and cooled
1 cup grape tomatoes, sliced in half or in quarters
1/2 cup finely chopped red onion
1 avocado, cut into 1/2 inch chunks

1 Tbsp. freshly squeezed lime juice
2 Tbsp. olive oil
1/2 tsp. lime zest
1/4 cup cilantro, chopped
1/4 tsp. salt
1/4 tsp. pepper

Mix all dressing ingredients in a small bowl and set aside. In a medium glass bowl, mix corn, tomatoes, onion and avocado. Pour dressing over vegetables and toss gently. Adjust seasoning to taste. Refrigerate to chill or serve at room temperature. This recipe takes about 10-15 minutes to prepare.

This tastes great as a salad or as a topper for tacos. Makes enough for 4-6 people.
