Apple Cinnamon Buttermilk Waffles



3 eggs
3/4 cup buttermilk, warmed to take the chill off
3/4 cup milk, warmed to take the chill off
1/2 cup unsalted butter, melted
1 medium MacIntosh apple, peeled, cored and grated
1 teaspoons cinnamon
1/4 tsp. ginger
1/4 tsp. nutmeg
pinch ground cloves
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup granulated sugar
1 1/2 cups flour
1/2 cup chopped pecans

Heat waffle iron. In large bowl, whisk together eggs, buttermilk, milk and butter. Stir in apple.Add spices, baking soda, salt and sugar and whisk together. Next mix in the flour until almost smooth. It is okay to have some small lumps.
Sprinkle about a tablespoon of pecans on the bottom of the waffle iron, then pour about a cup of batter on top and then sprinkle another tablespoon of pecans on top. Close the waffle iron and cook until golden brown. The waffles will not be crispy, but should be firm. Keep waffles on a plate in a warm oven while cooking the others.
Serve with warmed maple syrup.
