I just made these for dinner and loved them! They are a lot healthier than the ones you buy in the store and don't take very much work at all! I'm sure any kind of potato would taste great, but the yukon gold have a very buttery flavor which makes them taste even better!
Prep Time: 10 minute
Cook Time: 30-45 minutes
Yields: 4 servings
Ingredients:
4 cups Yukon Gold potatoes cut in “French fry” sizes (with skins on)
¼ cup coconut oil or olive oil
2 tsp. paprika
2 tsp. garlic powder
2 tsp. chili powder
2 tsp. onion powder
(opt. add cayenne powder for a zip)
Directions:
Preheat oven to 450 degrees. Cut potatoes into strips (French fry size) and soak them for about 10-15 minutes in cold (icy) water. Drain and pat dry. Put potatoes into a large zip lock bag and add oil and spices. Mix together until the potatoes are coated. Place on a large stoneware baking sheet (I use Pampered Chef large bar pan).
Bake for 30-45 minutes, turning once. Time can be longer if you want them crispier. Be sure to use all the spices! Add salt and pepper and enjoy!
