Tuna Melts on Ciabatta Bread

A quick meal you can make when you have little time to cook. Ready in about 10 minutes! Serve with homemade soup, a salad, or chips.

1 loaf of ciabatta bread (I get mine at Trader Joe's)
Olive oil
15 oz. canned Albacore white tuna
1/2 c. Hellmann's Mayonnaise (whatever kind you like)
1/4 c. pickle relish
1-2 stalked celery, finely diced
pepper to taste
12 oz. shredded Swiss cheese
(optional -- sliced tomatoes)

Cut ciabatta bread in half horizontally and then into fourths (you should have 8 pieces of bread). Brush with olive oil and either grill bread or put on a pan and lightly toast under the broiler.

Mix tuna, mayo, celery, pickle relish and pepper until well blended. Spread generously on the 8 slices of toasted bread. Top with shredded Swiss cheese (if adding sliced tomatoes, put tomatoes on top of tuna and then top with cheese).

Broil until cheese is melted and bubbly - about 3-5 minutes. Remove from oven and serve open-faced. You don't need a knife and fork to eat -- just pick it up and enjoy!
