Simple side dish - perfect in the summer. You can make this with many different vegetables to change it up (example - add sliced tomatoes or grape tomatoes cuts in half)
2 garlic cloves, finely chopped
1 zucchini squash, sliced
1 yellow summer squash, sliced
1 red pepper, cut into thin strips
1/4 small purple onion, roughly chopped
1/4 c. sweet white onion, chopped
olive oil
8-10 basil leaves, sliced
Heat oil, add garlic for 20 seconds. Add squash and cook for about 5 minutes, Add the rest of the vegetables and stir fry until tender crisp. Add the fresh basil as garnish just before serving.
