Pesto Avocado Sauce for Pasta

This creamy sauce's secret ingredient is a ripe avocado. Tastes amazingly smooth and creamy, AND it takes only as long to make the sauce as it does to cook the pasta. I made mine with Papparadelle .

1 large ripe avocado, peeled, remove seed
1/4 cup good olive oil
1/4 cup fresh basil leaves
1/4 cup freshly grated Parmesan cheese
2 cloves garlic, crushed
2-3 Tbsp freshly squeezed lemon juice
Salt and Pepper

Pasta of your choice, cooked and well-drained.

Place all ingredients except pasta and salt and pepper into a food processor or blender (like a Vitamix). Blend until very creamy and smooth. Remove and add to warm, cooked pasta. Season with salt and pepper and sprinkle with additional Parmesan cheese.
